Ingredients

4 Chicken breasts, cut into 1-inch cubes

½ cup Fresh cilantro, chopped

6 Garlic cloves, minced

¼ cup Olive oil

1 teaspoon Salt

¼ teaspoon Red pepper flakes

1 cup Sweet chili sauce

Lime wedges, for serving

Directions

  1. In a bowl, combine the chopped cilantro, minced garlic, olive oil, salt, and red pepper flakes to create a marinade.

  2. Add the cubed chicken breast to the marinade and toss until all pieces are evenly coated. Let sit for 2-3 minutes while you prepare the skewers.

  3. Thread the marinated chicken cubes onto metal or wooden skewers (if using wood, soak in water for 30 minutes beforehand), dividing evenly among 6 skewers.

  4. Heat a grill or grill pan to medium-high heat. Place the skewers on the hot grill and cook for 4-5 minutes, turning occasionally, until the chicken is cooked through with no pink inside and reaches an internal temperature of 165°F.

  5. During the last minute of cooking, brush the skewers generously with sweet chili sauce on all sides.

  6. Remove from heat and serve the skewers hot with lime wedges on the side for squeezing over each bite.
