Ingredients

1 apple, peeled, cored, and cut into small chunks

3 celery sticks, finely sliced

1 teaspoon Dijon mustard

1 teaspoon honey

1 green lettuce head, torn into bite-sized pieces

4 tablespoons olive oil

1 cup sugar-free pickled onions, halved or quartered if large

10 radishes, trimmed and finely sliced

Salt and freshly ground black pepper to taste

3.5 ounces sharp Cheddar cheese, cut into chunks

3.5 ounces Stilton cheese (or blue cheese), cut into chunks

3 tablespoons white wine vinegar

Directions

  1. In a medium bowl, whisk together the Dijon mustard, honey, white wine vinegar, and olive oil until well blended. Season with salt and freshly ground black pepper to taste. Set the dressing aside.

  2. In a large salad bowl, combine the torn lettuce, apple chunks, sliced celery, and sliced radishes. Toss gently to mix all the vegetables together.

  3. Pour the prepared dressing over the salad and toss well to coat all the vegetables evenly.

  4. Divide the dressed salad among four serving plates. Top each plate with chunks of sharp Cheddar cheese, Stilton cheese, and the pickled onions. Toss lightly before serving.
