Pork and Apple Sandwiches

Ingredients
1 pork tenderloin (about 1.5 lb)
3 tbsp ketchup
1 tbsp honey
1 tbsp low-sodium soy sauce
2 tsp grated ginger
1 large baguette, sliced lengthwise
2 Gala apples
1 bunch fresh arugula
Directions
Pat the pork tenderloin dry with paper towels and season lightly with salt and pepper.
Heat a large skillet over medium-high heat. Once hot, add the pork and sear for 3-4 minutes per side until a golden crust forms.
In a small bowl, whisk together the ketchup, honey, soy sauce, and grated ginger until smooth.
Pour the glaze over the seared pork and reduce heat to medium. Continue cooking, turning the pork occasionally and basting with the glaze, until the internal temperature reaches 145°F (approximately 5-7 minutes).
Remove the pork from heat and let it rest for 2-3 minutes, then slice thinly against the grain.
Slice the baguette in half lengthwise and lightly toast the cut sides in the skillet for 1-2 minutes until lightly golden.
Core and thinly slice the Gala apples.
Assemble the sandwiches by dividing the sliced pork evenly between the two baguette halves. Top with sliced apples, fresh arugula, and drizzle with any remaining glaze from the pan.
Cut the baguette into four equal portions and serve immediately.
