Ingredients
2 lb Pork tenderloin
2 large Sweet potatoes, peeled and cut into 2½-inch pieces
3 sprigs Fresh rosemary sprigs
3 large cloves Garlic cloves, sliced
¼ cup Extra-virgin olive oil
Sea salt
Freshly cracked black pepper
Directions
Preheat your oven to 425°F (220°C). Pat the pork tenderloins dry with paper towels to help achieve a good sear.
Peel and cut the sweet potatoes into even 2½-inch pieces. Slice the garlic cloves and have your rosemary sprigs ready.
In a large roasting pan, toss the sweet potato pieces with 2 tablespoons of olive oil, salt, and pepper until evenly coated. Spread them in a single layer around the perimeter of the pan.
Rub the pork tenderloins all over with the remaining 2 tablespoons of olive oil, then season generously with salt and pepper on all sides.
Make small slits across the top of each pork tenderloin and insert sliced garlic and rosemary sprigs into the slits, distributing them evenly.
Place the seasoned pork tenderloins in the center of the roasting pan, nestled among the sweet potatoes.
Roast in the preheated 425°F oven for 30–35 minutes, until the pork reaches an internal temperature of 145°F when measured with a meat thermometer at the thickest part. The sweet potatoes should be tender and lightly caramelized.
Remove from the oven and let the pork rest for 5 minutes before slicing. Serve the sliced pork alongside the roasted sweet potatoes, drizzling with any pan juices.
Comments
This is an honest 50 minutes, counting oven time, and hits Charlotte's pantry perfectly—pork tenderloin and sweet potatoes are everyday finds at Harris Teeter, Food Lion, Kroger, and Walmart, while rosemary and garlic sit in every produce section. At roughly $3.50 per serving for a quality cut of pork and local sweet potatoes, the cost is moderate for a main that serves six with no special shopping. The dish is genuinely low-fuss: lay it on a sheet pan, roast it, and walk away. It reheats beautifully and fits a family weeknight without question.
