1 2/3 cups frozen mixed vegetables, thawed

1 cup cooked chicken, diced

1 can (10.75 ounces) reduced-sodium condensed cream of chicken soup

1 cup reduced-fat baking mix

1/2 cup fat-free milk

1 large egg

Directions

  1. Wash your hands thoroughly with soap and warm water. Preheat the oven to 400°F.

  2. In an ungreased 9-inch pie plate, combine the thawed mixed vegetables, diced cooked chicken, and cream of chicken soup. Stir gently until well combined.

  3. In a separate mixing bowl, combine the baking mix, milk, and egg. Using a fork, stir until the mixture is just blended and no large lumps remain.

  4. Pour the batter mixture over the chicken and vegetable filling in the pie plate, spreading it gently to cover evenly.
