Ingredients
4% or full-fat Greek yogurt
1 pint fresh figs, quartered
4 ounces goat cheese
4 tablespoons honey, divided
1 fresh rosemary sprig (optional)
Directions
Heat your oven to 400°F. In a bowl, gently toss the quartered figs with 2 tablespoons of honey until evenly coated. Spread them in a single layer on a baking sheet and roast for 10-15 minutes, stirring halfway through, until the figs begin to shrivel, brown at the edges, and caramelize slightly.
Remove the roasted figs from the oven and allow them to cool completely on the baking sheet.
In a large bowl, whisk together the Greek yogurt, goat cheese, and the remaining 2 tablespoons of honey until smooth and well blended with no lumps. Cover and refrigerate the mixture for at least 1 hour.
Pour the chilled yogurt mixture into your ice cream maker and churn according to the manufacturer's instructions until the mixture reaches a soft-serve consistency.
During the final minute of churning, add the cooled roasted figs and churn for another 1-2 minutes to distribute them evenly throughout the frozen yogurt.
Transfer the mixture to a freezer-safe container and freeze for at least 1 hour until it reaches a firmer soft-serve consistency. Before serving, remove from the freezer and let sit at room temperature for 10-15 minutes to soften slightly for easier scooping.
