Ingredients
5 tablespoons peeled beet chunks
7 fresh mint leaves
300 g pineapple chunks
400 g African star apple pulp
100 g pitted dates
1 cup cold water
Directions
Rinse all fruits thoroughly under cool running water, ensuring beets and pineapple are cleaned completely before use.
Place the peeled beet chunks, fresh mint leaves, pineapple chunks, African star apple pulp, and pitted dates into a blender.
Pour the cold water into the blender. Start with about three-quarters of a cup and adjust the amount as needed for your desired consistency.
Blend on high speed for 60–90 seconds, or until the mixture is completely smooth and no visible chunks remain.
Pour the smoothie into serving glasses and serve immediately while cold. Add more water if you prefer a thinner consistency.
Comments
Fresh beets and mint are easy finds at Harris Teeter, Food Lion, and Walmart, but african star apple forces a special trip to an African or specialty market in Charlotte—the real cost of this recipe beyond the ingredient list. Pineapple, dates, and water keep it cheap at roughly $1.50 per serving, and the stated time is honest for a blender drink. The main caveat is that smoothies don't keep well and must be drunk immediately, making this a same-night commitment rather than a weeknight workhorse for leftovers or meal prep.
