6 whole wheat English muffins, split in half

1 1/2 cups cooked skinless chicken breast, shredded or cut into bite-sized pieces

3/4 cup barbecue sauce

1 bell pepper, diced

3/4 cup shredded smoked cheddar cheese

Directions

  1. Preheat your oven to 400°F (200°C). Place the split English muffins on a baking sheet, cut-side up, and lightly toast them for 2-3 minutes until they start to firm up but are not yet golden brown.

  2. While the muffins toast, heat a small skillet over medium-high heat. Add the diced bell pepper and sauté for 3-4 minutes, stirring occasionally, until softened and slightly caramelized.

  3. In a small bowl, combine the cooked shredded chicken with the barbecue sauce, stirring until the chicken is evenly coated.

  4. Remove the partially toasted muffins from the oven. Divide the BBQ chicken mixture evenly among the 12 muffin halves, spreading it across each one.

  5. Top each muffin with sautéed bell pepper pieces, then sprinkle the shredded cheddar cheese evenly over all the muffin pizzas.
