Ingredients
2 eggs, scrambled
1/2 cup grated cheddar or colby jack cheese
4 flour tortillas (6 to 8 inches)
4 tablespoons salsa, optional
Fresh parsley for garnish, optional
Directions
Wash your hands thoroughly with soap and water before beginning preparation.
Scramble the 2 eggs in a skillet over medium heat until they are fully cooked through, then set aside.
Place each flour tortilla on a flat surface. Divide the scrambled eggs evenly among all 4 tortillas, using about 1/4 of the cooked eggs on each one.
Sprinkle 2 tablespoons of the grated cheese over the eggs on each tortilla.
Place 2 quesadillas at a time on a microwave-safe plate and heat on high power for 30 to 45 seconds, until the cheese is fully melted and the tortillas are warm. Repeat with the remaining 2 quesadillas.
Top each warm quesadilla with 1 tablespoon of salsa if desired, then fold the tortilla in half.
Garnish with fresh chopped parsley if desired, and serve immediately.
Comments
Every ingredient is a staple at every Charlotte-area grocery chain—eggs, cheese, tortillas, salsa, and parsley are all mainstream finds with no special trips required. At roughly $0.80 to $1.20 per serving, this is genuinely cheap, driven by the eggs and tortillas carrying the cost. The 13-minute claim is honest; you're scrambling eggs and assembling quesadillas, which moves fast. It reheats decently in a skillet or toaster oven, so leftovers work for lunch, and there's minimal fussing—a solid weeknight or weekend breakfast for a family of four.
