2 eggs, scrambled
1/2 cup grated cheddar or colby jack cheese
4 flour tortillas (6 to 8 inches)
4 tablespoons salsa, optional
Fresh parsley for garnish, optional
Directions
Wash your hands thoroughly with soap and water before beginning preparation.
Scramble the 2 eggs in a skillet over medium heat until they are fully cooked through, then set aside.
Place each flour tortilla on a flat surface. Divide the scrambled eggs evenly among all 4 tortillas, using about 1/4 of the cooked eggs on each one.
Sprinkle 2 tablespoons of the grated cheese over the eggs on each tortilla.
Place 2 quesadillas at a time on a microwave-safe plate and heat on high power for 30 to 45 seconds, until the cheese is fully melted and the tortillas are warm. Repeat with the remaining 2 quesadillas.
Top each warm quesadilla with 1 tablespoon of salsa if desired, then fold the tortilla in half.
Garnish with fresh chopped parsley if desired, and serve immediately.
