Ingredients
1/2 cup pickle brine
1/4 cup butter
2 cups thinly sliced carrots
1/4 teaspoon cayenne pepper
5 cups chicken broth
1 cup finely diced dill pickles
1/4 cup all-purpose flour
2 cups whole milk
5 medium-large potatoes, diced small
1/2 teaspoon salt
Directions
In a large pot, combine the diced potatoes, sliced carrots, and chicken broth. Bring to a boil over high heat, then reduce to medium heat. Simmer for approximately 10 minutes, until the potatoes and carrots are tender and easily pierced with a fork.
Add the salt, finely diced dill pickles, pickle brine, and cayenne pepper to the pot. Stir to combine. Maintain medium heat and continue to simmer.
In a large microwave-safe bowl, melt the butter in the microwave (about 1-2 minutes on high power).
Once the butter is melted, whisk in the flour until smooth, creating a paste with no lumps.
Gradually whisk the milk into the butter-flour mixture until fully combined and smooth. Microwave on high power for 2 minutes, watching closely to prevent the mixture from boiling over. Use a bowl large enough to allow the milk to bubble up without overflowing.
Remove from microwave and whisk the mixture thoroughly. Return to the microwave and heat on high power for another 1 minute and 45 seconds, again watching carefully. The milk should thicken to a cream sauce consistency. If not fully thickened, return to the microwave in 30-second to 1-minute increments until the desired thickness is reached.
Slowly pour the thickened milk mixture into the simmering soup pot, stirring constantly to incorporate it evenly throughout the broth. The soup will become creamy.
Taste the soup and adjust seasoning as needed with additional salt or cayenne pepper. Simmer gently for 1-2 minutes longer to allow flavors to meld. Serve hot.
