Ingredients
4 tablespoons unsalted butter
7 cups green cabbage, sliced 1/2-inch thick
1 medium yellow onion, halved and sliced 1/2-inch thick
¾ teaspoon fine sea salt, divided
½ teaspoon ground black pepper, divided
12 ounces egg noodles
Directions
Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions until al dente. Drain and set aside.
While the noodles cook, melt the butter in a large skillet over medium heat. Add the sliced cabbage and onion.
Season the cabbage and onion with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Stir to combine.
Cook the cabbage mixture uncovered, stirring occasionally, for 15–20 minutes until the vegetables are very tender and beginning to caramelize, with some golden-brown edges.
Add the cooked noodles to the skillet with the cabbage mixture. Toss gently to combine.
Season with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Toss again, taste, and adjust seasoning if needed.
Divide among 6 plates and serve warm.
