Ingredients

1/4 cup minced Thai chilies

2 tablespoons grated fresh ginger

1/4 cup seasoned rice vinegar

1/4 cup sugar

1 cup Mae Ploy sweet chili sauce

2 teaspoons soy sauce

1/2 cup cubed butter

Directions

  1. In a medium saucepan, combine the minced Thai chilies, grated ginger, seasoned rice vinegar, and sugar. Stir well to combine.

  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Simmer for 2 to 3 minutes until the sugar is fully dissolved and the flavors begin to meld.

  3. Remove from heat and stir in the Mae Ploy sweet chili sauce and soy sauce until fully incorporated.

  4. Add the cubed butter to the sauce and stir constantly until completely melted and the sauce becomes smooth and glossy.

  5. Let the sauce cool slightly before serving, or transfer to a bowl for dipping. Store in an airtight container in the refrigerator for up to 2 weeks.
