Ingredients

1 medium head green cabbage, roughly the size of a child's head

1/4 cup kosher salt

1/4 cup white sugar

2 Juice of 2 lemons

1/2 cup mayonnaise

3 large carrots, grated

3 scallions, chopped (green and white parts)

1/2 cup fresh dill, chopped

1/2 cup fresh parsley, chopped

Fresh ground black pepper to taste

1/4 cup white vinegar

Directions

  1. Remove the outer leaves from the green cabbage and discard. Rinse the cabbage under cold water and pat dry. Using a sharp knife or mandoline slicer, finely shred the cabbage into thin ribbons and place in a large mixing bowl.

  2. Add the kosher salt and white sugar to the shredded cabbage. Using clean hands, massage the mixture for 5 to 7 minutes until the cabbage begins to soften and releases its natural moisture. Let the cabbage sit for 10 minutes to further soften.

  3. Squeeze the fresh lemon juice over the cabbage and let it sit for another 5 minutes. Then gently squeeze the excess liquid from the cabbage using your hands or by pressing it against the side of the bowl with the back of a spoon. Drain off and discard the liquid.

  4. In a separate small bowl, whisk together the mayonnaise and white vinegar until smooth and well combined.

  5. Add the grated carrots, chopped scallions, fresh dill, and fresh parsley to the cabbage. Pour the mayonnaise mixture over the vegetables.

  6. Toss all ingredients together gently but thoroughly until every piece of vegetable is evenly coated with the creamy dressing. Season generously with fresh ground black pepper to taste.

  7. Transfer the coleslaw to a serving dish. The coleslaw can be served immediately at room temperature or chilled in the refrigerator for 30 minutes to 2 hours before serving for a colder presentation. Taste and adjust seasonings as needed before serving.
