Ingredients
½ cup Arhar dal (toor dal / split pigeon peas)
2 cups Water
2 tablespoons Oil
1 teaspoon Cumin seeds
½ cup Onion, small, chopped
1 teaspoon Ginger paste
1 teaspoon Garlic paste
2 Green chilies, small, chopped finely
½ cup Tomatoes, medium, chopped
1 teaspoon Red chili powder
¼ teaspoon Turmeric powder
½ teaspoon Cumin powder
½ teaspoon Coriander powder
½ teaspoon Garam masala
1 teaspoon Kasoori methi (dried fenugreek leaves)
to taste Salt
1 teaspoon Lemon juice
for garnish Cilantro, chopped finely
Directions
Rinse the arhar dal under cool running water, stirring gently until the water runs clear. Transfer to a pressure cooker and add 1 cup of water.
Close the pressure cooker lid and place the weight on top. Cook on medium heat for 5–6 whistles until the dal is completely soft and broken down.
Allow the pressure to release naturally on its own, then carefully open the lid. While waiting for pressure release, begin preparing the spice base.
Pour the oil into a large pan and heat over medium heat until shimmering.
Add the cumin seeds to the hot oil and let them sizzle and bloom for a few seconds, releasing their aroma.
Stir in the chopped onion and mix well to coat with oil.
Cook the onion, stirring occasionally, until it turns light golden brown, about 4–5 minutes.
Add the ginger paste, garlic paste, and chopped green chilies. Sauté for 30–40 seconds until fragrant, stirring constantly to prevent burning.
Add the chopped tomatoes and stir well to combine with the aromatics.
Cook the tomatoes for 1–2 minutes, stirring occasionally, until they soften and begin to break down.
Add all the dry spices together: red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, and kasoori methi. Season with salt to taste.
Stir well and cook for 1 minute, mixing constantly. You will notice oil beginning to separate and float on the surface, indicating the spices are properly cooked.
Pour in the cooked dal along with the remaining 1 cup of water. Stir to combine thoroughly.
Bring to a gentle simmer and let it cook for 5 minutes, stirring occasionally, to allow the flavors to meld.
Turn off the heat. Squeeze in the lemon juice and fold in the freshly chopped cilantro.
Stir well and transfer to serving bowls. Serve hot as a starter or light main course.
