Ingredients

250 g Very lean pork mince

handful Fresh breadcrumbs

½ Small red onion, finely chopped

½ Garlic clove, crushed or finely chopped

½ Lemon zest, finely grated

1 tbsp Fresh oregano leaves, finely chopped

1 Medium egg

a little Olive oil

100 g Low-fat Greek yogurt

½ tbsp Fresh dill, chopped, plus extra for serving

8 Small radishes, roughly chopped or sliced

½ Garlic clove, crushed

½ Lemon juice

Salt and black pepper to taste

Directions

  1. Combine the pork mince, breadcrumbs, chopped red onion, crushed garlic clove, lemon zest, and fresh oregano in a large mixing bowl. Crack the egg into the bowl and season generously with salt and pepper. Mix all ingredients together gently but thoroughly until just combined. Form the mixture into 6 equal patties, pressing each gently to ensure they hold together. Refrigerate until ready to cook.

  2. While the patties chill, prepare the radish tzatziki by combining the Greek yogurt, chopped radishes, remaining crushed garlic clove, and lemon juice in a small bowl. Stir in the chopped dill and season with salt and pepper to taste. Set aside.

  3. Heat a griddle pan or heavy skillet over high heat until it is very hot. Lightly brush the pork patties with a small amount of olive oil on both sides. Place the patties onto the hot pan and cook for 2 to 3 minutes on each side, until golden brown and cooked through.

  4. Arrange the cooked pork patties on serving plates and spoon the radish tzatziki alongside. Scatter additional fresh dill over the top if desired, and serve immediately.
