Ingredients

Cooking spray

1/4 cup marinara sauce

1/4 cup cooked chickpeas, drained and rinsed if canned

1/8 teaspoon red pepper flakes

Pinch kosher salt

1 large egg

Directions

  1. Lightly coat a microwave-safe bowl with cooking spray to prevent sticking.

  2. Pour the marinara sauce into the prepared bowl and distribute the chickpeas throughout the sauce.

  3. Sprinkle the red pepper flakes and kosher salt evenly over the sauce mixture.

  4. Microwave the sauce mixture on high power for 1-2 minutes until it is steaming and warm.

  5. Carefully crack the egg directly into the center of the hot sauce, keeping the yolk intact.

  6. Microwave on high power for 1-2 minutes more, until the egg white is completely set and the yolk reaches an internal temperature of 160°F if you prefer it fully cooked, or until the whites are opaque and yolk is set to your preference.

  7. Remove the bowl carefully from the microwave using oven mitts or a kitchen towel, as the bowl will be very hot. Let cool for 30 seconds before serving directly from the bowl.
