Ingredients

3 pounds baby back ribs, separated into individual ribs or left in slabs

1/2 cup maple syrup

2 tablespoons apple cider vinegar

Kosher salt to taste

Black pepper to taste

Directions

  1. Preheat your oven to 275°F. Pat the baby back ribs dry with paper towels and arrange them on a large baking sheet lined with foil.

  2. Season both sides of the ribs generously with kosher salt and black pepper, rubbing the seasoning in evenly.

  3. Cover the baking sheet tightly with foil and place in the oven. Roast for 2 hours, or until the ribs become very tender.

  4. While the ribs are roasting, whisk together the maple syrup and apple cider vinegar in a small bowl until well combined.

  5. After 2 hours, carefully remove the ribs from the oven and increase the oven temperature to 350°F. Uncover the ribs and brush both sides with the maple-vinegar glaze.

  6. Return the ribs to the oven, uncovered, for 20 minutes. Remove and brush again with the glaze, then roast for another 10 minutes until the glaze is thick and caramelized.

  7. Let the ribs rest for 5 minutes before serving. Serve immediately, drizzling any remaining glaze over the top.
