Ingredients

1 1/2 pounds russet potatoes, peeled, cut into 2-inch chunks, and rinsed

Kosher salt, to taste

4 large eggs

1 pound ground beef, ground lamb, or a combination

1 teaspoon ground turmeric

1/2 teaspoon freshly ground black pepper

All-purpose flour, for dusting

as needed Olive oil, vegetable oil, or a combination, for pan-frying

Directions

  1. Boil the diced potatoes in salted water until they are fork-tender, approximately 15 minutes. Drain thoroughly and allow to cool slightly.

  2. In a large bowl, crack 3 of the 4 eggs and whisk them together lightly. Set the remaining egg aside.

  3. Add the cooled cooked potatoes to the beaten eggs and mash until mostly smooth with some small lumps remaining. Season with 1/2 teaspoon of salt.

  4. Add the ground meat, turmeric, and black pepper to the potato mixture and combine gently with your hands until evenly distributed, being careful not to overwork the mixture.

  5. Beat the remaining egg in a small bowl and set aside. Place flour on a plate.

  6. Divide the meat mixture into 12 equal portions and form each into an oval or rectangular patty, approximately 3 inches long and 1 inch thick.

  7. Dip each patty lightly in the reserved beaten egg, then dust both sides with flour, shaking off any excess.

  8. Heat the oil in a large skillet over medium-high heat. Working in batches to avoid crowding, pan-fry the patties for 4 to 5 minutes per side until they are golden brown and the ground meat reaches an internal temperature of 160°F.

  9. Transfer the cooked patties to a plate lined with paper towels to drain briefly. Serve warm with rice, fresh vegetables, yogurt, or your preferred accompaniments.
