¼ cup vegetable oil

1 dried red chile (such as er jing tiao, bird chile, or chile de árbol)

½ medium head cabbage (about 1 lb.), cored and cut into 1–2 inch strips with leaves separated

1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt

1½ tsp. sugar

4–5 tsp. black (Chinkiang) vinegar

Directions

  1. Pour the vegetable oil into a large wok or high-sided skillet and place over medium-high heat. Swirl to coat the bottom of the pan and heat until the oil shimmers and moves easily, about 1 minute. Split the dried red chile in half with your hands, add it to the hot oil, and stir constantly for about 1 minute until the chile becomes very fragrant and darkens slightly. Increase the heat to high.

  2. Add the prepared cabbage pieces and leaves to the wok and toss continuously for about 2 minutes until the edges begin to brown and char. Sprinkle the salt and sugar evenly over the cabbage, then continue tossing constantly for 2–3 minutes more, lowering the heat slightly if the cabbage is browning too quickly. Cook until roughly one-quarter of the cabbage leaves show brown or charred spots, developing deeper flavor.

  3. Reduce the heat to medium and pour the black vinegar over the cabbage, tossing to coat everything evenly. Taste the mixture and add an additional teaspoon of vinegar if desired for more tang. Divide between two plates and serve immediately while still warm.
