Irish Buttered Carrots

Ingredients
1 pound carrots, peeled and trimmed
3 tablespoons unsalted Irish butter
kosher salt
freshly ground black pepper
1 teaspoon fresh thyme leaves
1 tablespoon celery leaves or flat-leaf parsley leaves
Directions
Preheat your oven to 375°F. Cut the prepared carrots into 2-inch pieces, aiming for relatively uniform sizes so they cook evenly.
Toss the carrot pieces with 1 tablespoon of the butter, a pinch of kosher salt, and a grind of black pepper. Spread them in a single layer on a baking sheet.
Roast the carrots in the preheated oven for approximately 45–50 minutes, stirring halfway through, until they are tender and beginning to caramelize at the edges.
Remove the roasted carrots from the oven and transfer them to a serving bowl. While still warm, dot with the remaining 2 tablespoons of butter and toss gently until the butter melts and coats the carrots.
Sprinkle the fresh thyme leaves and celery or parsley leaves over the carrots. Taste and adjust seasoning with additional salt and pepper as needed. Serve warm.
