Ingredients
2 sheets matzo
2 tablespoons unsalted butter
4 eggs at room temperature
Salt to taste
Directions
Place matzo sheets in a colander. Run cold water over them, turning occasionally, until they are well moistened and softened. Allow excess water to drain completely.
In a medium bowl, crack the eggs and beat them together until yolks and whites are fully combined.
Break the drained matzo into bite-sized pieces and add to the beaten eggs. Stir gently to coat all pieces evenly. Let the mixture sit for about 1 minute to allow the matzo to absorb the egg.
Heat the butter in a non-stick skillet over medium heat. Once melted and foamy, pour the matzo-egg mixture into the pan.
Cook, stirring frequently and scraping the bottom of the pan, until the eggs are fully cooked and scrambled throughout, about 3–5 minutes. The mixture should be set with no wet egg remaining.
Season with salt to taste. Serve immediately while hot.
