1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
1 cup butter, melted
2 cups sugar
3 large eggs
1 teaspoon vanilla extract
10 teaspoons unsweetened cocoa powder
1⅓ cups sweetened shredded coconut
4 teaspoons milk or heavy cream
2 tablespoons brown sugar
Directions
Preheat your oven to 350°F. Line an 8x11-inch baking pan with aluminum foil and spray generously with non-stick cooking spray.
In a large mixing bowl, combine the melted butter and sugar, whisking until well blended.
Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract until fully incorporated.
Add the cocoa powder, flour, salt, and baking powder to the wet mixture. Whisk gently just until the ingredients are combined—do not overmix.
Pour the batter evenly into the prepared pan and bake for 25-30 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
While the brownies are baking, prepare the topping by combining the shredded coconut, brown sugar, and milk in a small bowl, stirring until the mixture is well combined.
When the brownies finish baking, remove them from the oven and carefully spread the coconut topping evenly over the surface.
Change the oven setting to broil. Place the pan under the broiler for 1-3 minutes, watching carefully, until the coconut topping is lightly golden brown. Remove and cool before serving.
