The One-Pot Shredded Beef I Make All the Time
Recipe GLPR871765fa55d056
A hearty, no-fuss one-pot shredded beef that falls apart with a fork. Chuck roast is seared, then braised low and slow in aromatic beef broth with onions, garlic, and Italian herbs. The result is tender, flavorful meat that works for sandwiches, bowls, tacos, or eating straight from the pot. Optional giardiniera adds a zesty kick if desired.

Ingredients
4-pound chuck roast
2 teaspoons Italian seasoning
1 teaspoon kosher salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
2 tablespoons neutral oil (such as avocado or canola)
1 large yellow or white onion, sliced into half-moons
2 cloves garlic cloves, roughly chopped
4 cups beef broth
½ cup drained giardiniera (optional)
Directions
Pat the chuck roast dry with paper towels. In a small bowl, combine Italian seasoning, kosher salt, and black pepper. Rub this mixture evenly all over the roast.
Heat the neutral oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Once shimmering, carefully place the roast in the pot and sear for 3–4 minutes on each side until golden brown. Transfer the roast to a plate.
Reduce heat to medium. Add the sliced onion to the pot and cook for 3–4 minutes, stirring occasionally, until softened and lightly browned. Add the chopped garlic and cook for another minute until fragrant.
Pour the beef broth into the pot, scraping up any browned bits from the bottom. Return the seared roast to the pot, nestling it into the liquid. Bring to a simmer.
Reduce heat to low, cover the pot, and simmer gently for 3–4 hours, until the beef is fork-tender and easily pulls apart into shreds. Check occasionally to ensure the liquid maintains a gentle simmer.
Remove the pot from heat. Using two forks or shredding claws, shred the meat directly in the pot, mixing it into the liquid and onions. Taste and adjust seasonings with additional salt and pepper as needed.
If using giardiniera, stir it in now and combine well. Serve the shredded beef in bowls with some of the cooking liquid, or use for sandwiches, tacos, or grain bowls.
Comments
This is a straightforward braise that hits real Charlotte needs: chuck roast is cheap and always available at Harris Teeter, Food Lion, Kroger, and Walmart, and the rest are pantry staples except giardiniera, which most readers will find at Harris Teeter or Kroger but might require a second stop at ALDI if they want a cheaper option. At roughly $1.50–$2.00 per serving for a ten-serving pot, it's genuinely economical for weeknight feeding. The stated 285 minutes (about 4.75 hours) is honest for low-and-slow cooking, though much of that is unattended braise time, making it friendly for a busy day. Leftovers reheat beautifully and freeze well, a major win for family meal planning, though the long cook time means this is weekend or slow-cooker territory, not a true weeknight solution.
