Ingredients

7 pieces thinly sliced beef

1 ounce fresh enoki mushrooms

4 pieces garlic stems

1 ounce fresh green beans

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon Japanese sake

1 tablespoon soy sauce

1 tablespoon orange marmalade

1 tablespoon freshly grated ginger

1 piece green onion, finely chopped

Directions

  1. Prepare the filling by gathering the enoki mushrooms, garlic stems, and green beans. Trim the green beans to roughly the same length as the beef slices. Arrange these ingredients on a clean work surface.

  2. Lay one beef slice flat on a cutting board. Place a small bundle of enoki mushrooms, one garlic stem, and one green bean in the center of the beef slice. Roll the beef tightly around the vegetables, tucking in the sides to secure the filling. Repeat with the remaining beef slices and vegetables to create 7 beef rolls total.

  3. Heat the olive oil in a skillet over medium-high heat. Once the oil shimmers, carefully place the beef rolls seam-side down into the pan in a single layer.

  4. Sear the beef rolls for 2–3 minutes until the exterior develops a golden-brown crust. Gently turn the rolls and sear the other sides for another 2 minutes. The beef should reach an internal temperature of 145°F for medium-rare doneness. Season with salt and pepper.

  5. Deglaze the pan by pouring in the sake, scraping up any browned bits from the bottom with a wooden spoon. Let the sake reduce for about 30 seconds.

  6. In a small bowl, whisk together the soy sauce, orange marmalade, and freshly grated ginger. Pour this sauce over the beef rolls, turning them to coat evenly.

  7. Simmer the rolls in the sauce for 1–2 minutes, allowing the flavors to meld and the sauce to thicken slightly. The rolls should remain tender and the sauce glossy.

  8. Transfer the beef rolls to a serving plate. Pour the remaining sauce over the top and garnish with the chopped green onion. Serve immediately while still warm.
