3 medium potatoes

1 cup celery, chopped

1/2 cup onion, minced

1 cup frozen peas, thawed

1 teaspoon Dijon mustard

1/2 cup low-fat mayonnaise

1/2 cup non-fat plain yogurt

Black pepper to taste

Fresh lettuce for garnish (optional)

Fresh tomato slices for garnish (optional)

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning food preparation.

  2. Rinse the potatoes under cool running water and scrub gently to remove any dirt. Leave the nutritious skins intact and cut the potatoes into bite-sized chunks of approximately 1 to 1.5 inches.

  3. Place the potato chunks in a large pot and cover completely with cold water.

  4. Bring the water to a rolling boil over high heat. Then reduce the heat to medium and simmer uncovered for approximately 20 minutes, or until a fork easily pierces the largest potato chunk, indicating they are tender.

  5. Drain the potatoes thoroughly in a colander and rinse lightly with cold water to stop the cooking process and help them cool slightly.

  6. While the potatoes are cooking, add the chopped celery, minced onion, thawed peas, mustard, low-fat mayonnaise, and non-fat yogurt to a large mixing bowl. Stir until well combined.

  7. Once the potatoes are completely drained, add them to the mixing bowl with the other ingredients.

  8. Gently fold all ingredients together with a spatula until the potatoes are evenly coated with the dressing. Season with black pepper to your taste preference. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

  9. Just before serving, arrange fresh lettuce leaves on a serving platter or individual plates and top with the chilled potato salad. Garnish with fresh tomato slices if desired.
