5 tablespoons low-sodium tomato paste
1 teaspoon ketchup
2 teaspoons honey
1 teaspoon molasses
1 teaspoon Worcestershire sauce
4 teaspoons white vinegar
3/4 teaspoon cayenne pepper
1/8 teaspoon ground black pepper
1/4 teaspoon onion powder
2 garlic cloves, minced
1/8 teaspoon grated fresh ginger
1 1/2 pounds skinless chicken breasts or drumsticks
Directions
In a medium bowl, whisk together the tomato paste, ketchup, honey, molasses, Worcestershire sauce, and white vinegar until smooth and well combined.
Add the cayenne pepper, ground black pepper, onion powder, minced garlic, and grated ginger to the sauce mixture. Stir thoroughly to distribute all spices evenly throughout the sauce.
Pat the chicken dry with paper towels and place it in a large baking dish or on a rimmed sheet pan, arranging the pieces in a single layer.
Pour the spicy barbecue sauce evenly over the chicken, using a brush or spoon to coat all surfaces thoroughly.
Bake at 400°F (200°C) for 25–30 minutes, or until the thickest part of the chicken reaches an internal temperature of 165°F (74°C). If using drumsticks, check near the thighbone; if using breasts, check the thickest part.
Remove the pan from the oven and let the chicken rest for 3–5 minutes before serving. Transfer to a serving platter and spoon any accumulated sauce from the pan over the top.
