Ingredients

1 cup raw almonds

6 ounces chorizo, finely diced

6 ounces goat cheese, softened

30 pitted Medjool dates

10 slices bacon

Directions

  1. Preheat your oven to 350°F. Toast the raw almonds in a dry skillet over medium heat for 5-7 minutes, stirring frequently, until fragrant and lightly golden. Cool slightly, then chop finely. In a small bowl, combine the chopped almonds, finely diced chorizo, and softened goat cheese. Mix until well blended.

  2. Carefully stuff each pitted date with about 1 teaspoon of the almond-chorizo-goat cheese mixture, pressing gently to fill the cavity.

  3. Cut each bacon slice lengthwise into 3 equal strips. Wrap one bacon strip around each stuffed date, then secure with a wooden toothpick to prevent the bacon from unwrapping during cooking.

  4. Arrange the bacon-wrapped dates on a wire rack set over a baking sheet, spacing them about an inch apart to allow air circulation. Bake for 25-30 minutes until the bacon is crispy and browned.

  5. Remove from the oven and let cool for 10 minutes before serving. Transfer to a serving platter and enjoy while warm.
