Ingredients

1/4 cup chopped nuts (such as almonds, walnuts, or pecans)

2 tablespoons vegetable oil

2 cloves garlic, minced

2 cups kale, stems removed and leaves chopped

1/2 cup raisins

Salt to taste (optional)

Directions

  1. Preheat your oven to 350°F (175°C).

  2. Spread the chopped nuts evenly on a baking sheet and toast them in the preheated oven for 5 minutes until fragrant and lightly golden. Remove from the oven and set aside to cool slightly.

  3. While the nuts are toasting, prepare the kale by removing the thick center stems and chopping the leaves into bite-sized pieces. Mince the garlic cloves.

  4. Heat the vegetable oil in a large frying pan over medium heat for about 1 minute until shimmering.

  5. Add the minced garlic to the hot oil and cook for about 30 seconds, stirring constantly, until fragrant.

  6. Add the chopped kale to the pan and cook for 4 minutes, stirring occasionally, until the kale begins to soften and the leaves start to wilt.

  7. Add the toasted nuts and raisins to the pan and stir gently to combine everything together. Cook for 1 minute more, stirring constantly.

  8. Taste the mixture and add salt as desired. Transfer to a serving dish and serve warm.
