Julia's Sautéed & Steamed Collards

Ingredients
16 cups chopped Fresh collard greens
2 tablespoons Extra virgin olive oil
4 cloves Garlic cloves, minced
½ teaspoon Red pepper flakes
1 teaspoon Salt-free seasoning blend
Directions
Remove the thick bottom stems from each collard leaf and discard. Rinse the greens thoroughly under cool running water to remove any dirt or grit.
Pat the collards partially dry with a kitchen towel, leaving them slightly damp. Chop them into bite-sized pieces, approximately 2 to 3 inches in length.
Mince the garlic cloves into small, even pieces and set aside.
Heat the olive oil in a large skillet over high heat until it shimmers and is hot to the touch.
Add the chopped collards to the hot oil and stir continuously for about 1 minute. The greens will begin to wilt and soften as they sauté in the uncovered skillet.
Stir in the minced garlic and red pepper flakes, cooking for about 30 seconds until fragrant.
Sprinkle the salt-free seasoning blend over the collards and stir to distribute evenly.
Cover the skillet with a lid and reduce the heat to medium-high. Continue cooking for 2 to 3 minutes, allowing the collards to steam. The residual moisture from washing will create steam that cooks the greens.
Reduce the heat to low and continue steaming, covered, for an additional 4 to 6 minutes, until the collards are very tender and have reduced to approximately half their original volume. Stir occasionally to ensure even cooking.
Taste and adjust seasonings if desired. Transfer to a serving dish and serve hot.
