Directions

  1. Preheat your oven to 375°F. Arrange the red bell pepper halves cut-side up on a baking sheet lined with foil or parchment paper, and set aside.

  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3 minutes until softened. Stir in the grated carrot and cook for another 2 minutes, stirring occasionally.

  3. Add the ground coriander seed and cumin to the skillet, stirring constantly for about 30 seconds until fragrant.
