Ingredients

2 teaspoons vegetable oil

1 small skinless, boneless chicken breast half

1/2 cup plus 2 tablespoons barbecue sauce

1 (11-inch) pizza crust

1/2 cup grated smoked Gouda cheese

1/2 cup grated mozzarella cheese

3 tablespoons sliced red onion

2 tablespoons chopped fresh cilantro

Directions

  1. Preheat your oven to 400°F. Heat the vegetable oil in a skillet over medium-high heat.

  2. Add the chicken breast to the hot skillet and cook for 6–7 minutes per side until the internal temperature reaches 165°F. Remove the chicken to a clean cutting board and let rest for 2 minutes.

  3. Once cooled slightly, dice or shred the cooked chicken into bite-sized pieces.

  4. In a small bowl, combine the diced chicken with 1/2 cup of the barbecue sauce, stirring until evenly coated.

  5. Place the pizza crust on a baking sheet or pizza pan. Spread the remaining 2 tablespoons of barbecue sauce evenly over the crust as a light base.

  6. Distribute the barbecue chicken mixture evenly across the crust, leaving a small border around the edges.

  7. Combine the grated smoked Gouda and mozzarella in a bowl, then sprinkle the cheese blend evenly over the chicken layer.

  8. Scatter the sliced red onion over the cheese layer.

  9. Bake in the preheated oven for 12–15 minutes until the cheese is melted and the crust is golden brown.

  10. Remove the pizza from the oven and sprinkle the chopped cilantro over the top. Slice and serve immediately.
