Ingredients
1 bunch fresh cilantro, roughly chopped (about 1 cup packed)
1 clove garlic, minced
3 tablespoons plain yogurt
2½ tablespoons extra virgin olive oil
1 teaspoon fresh lime juice
1 teaspoon honey
1 teaspoon salt
1 teaspoon sugar, optional (for additional sweetness)
3 teaspoons water, optional (to adjust thickness)
Directions
Add the cilantro, minced garlic, yogurt, olive oil, lime juice, honey, and salt to a food processor.
Pulse the mixture until smooth and well blended, about 1–2 minutes. Stop and scrape down the sides of the bowl as needed.
Taste the dressing and adjust the seasonings to your preference. Add the optional sugar if you prefer a slightly sweeter dressing.
If the dressing is too thick, add the optional water a teaspoon at a time until you reach your desired consistency.
Transfer to a bowl and serve with salads, grilled chicken, fish, or roasted vegetables.
Comments
All ingredients are standard at any Charlotte grocery chain, with no special trips required; cilantro is consistently stocked at Harris Teeter, Food Lion, Publix, Kroger, and Walmart. At roughly $8–10 total for a batch that yields 3 servings plus leftover dressing, the cost per serving lands around $2.50–3.00, driven mainly by decent yogurt and fresh cilantro. The 15 minutes is honest for a blender job, though hand-whisking would stretch to 20 and lose some fluff. This reheats perfectly and actually improves overnight as flavors meld, making it a smart weeknight condiment for grain bowls, tacos, or grilled chicken that a family will use across multiple meals.
