Ingredients
1 large cucumber, peeled, seeded, and diced into pea-sized pieces
Coarse salt
8 ounces feta cheese
1/4 cup olive oil
2-3 tablespoons freshly squeezed lemon juice
1 tablespoon water
Freshly ground black pepper
1 small red onion, peeled and finely diced
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh dill
Directions
Place the diced cucumber pieces in a colander and sprinkle lightly with coarse salt. Toss gently to coat, then allow the cucumber to drain for 30 minutes to 1 hour, shaking the colander occasionally to release excess moisture.
In a large bowl, crumble the feta cheese into bite-sized pieces. Add the olive oil, lemon juice, water, and several grinds of fresh black pepper. Mix and mash the feta gently until it reaches a creamy, dressing-like consistency.
Add the drained cucumber, diced red onion, mint, parsley, and dill to the feta mixture. Gently toss all ingredients together until well combined. Taste the salad and adjust seasoning with additional salt and pepper as needed. Serve immediately.
