Cola Glazed Wings

Crispy broiled chicken wings glazed with a sweet and spicy cola sauce made with lime juice, brown sugar, and jalapeño. The wings are brushed with the syrupy glaze during cooking until golden and caramelized, creating a sticky, flavorful exterior. A perfect appetizer or crowd-pleasing main course.

Ingredients
1 cup cola
2 Juice of 2 limes
1 1/2 cups firmly packed light brown sugar
1 jalapeño, finely minced with seeds removed
2 pounds chicken wings
1/4 teaspoon coarse salt
Freshly ground black pepper to taste
Directions
In a small saucepan, combine the cola, lime juice, brown sugar, and minced jalapeño. Bring to a boil over high heat, stirring occasionally until the sugar dissolves completely.
Reduce the heat to medium-low and simmer the mixture, stirring occasionally, until it becomes syrupy and reduced to about half its original volume, approximately 30 minutes. The glaze should coat the back of a spoon. Keep warm over low heat.
While the glaze simmers, prepare the chicken wings. Separate the flats from the drumettes at the joint, and cut off the wing tips (reserve tips for stock if desired). Pat the wing pieces dry with paper towels.
Place all wing pieces in a large bowl. Sprinkle with the coarse salt and freshly ground black pepper, then toss well to coat evenly.
Pour approximately half of the warm glaze over the seasoned wings and toss to coat thoroughly. Reserve the remaining glaze in the saucepan, keeping it warm over low heat.
Position the oven rack 4 inches below the broiler element. Preheat the broiler to high. Line a baking sheet with aluminum foil for easy cleanup.
Arrange the glazed wing pieces on the prepared baking sheet in a single layer. Broil for 10 minutes, then remove the pan and brush the wings generously with reserved glaze.
Return the baking sheet to the broiler and cook for another 10 minutes, brushing once more with the remaining glaze halfway through. The wings should be golden brown and crispy with an internal temperature of 165°F.
Transfer the cooked wings to a serving platter and serve immediately while still warm and sticky from the glaze.
