1 box Devil's Food Cake Mix

2 Eggs

⅓ cup Vegetable Oil

2 tsp Vanilla Extract

6 Tbsp Butter, room temperature

4 oz Cream Cheese

1 Tbsp Milk

2 cup Powdered Sugar

⅓ cup Yellow Cake Mix (dry, from the box)

Yellow Food Coloring (optional)

Directions

  1. Preheat your oven to 350°F. Line baking sheets with parchment paper to prevent sticking.

  2. Pour the devil's food cake mix into a large mixing bowl and sift to break up any lumps. Add the two eggs, vegetable oil, and vanilla extract to the bowl.

  3. Stir the mixture until fully combined. The resulting dough will be thick and cake-like in texture.

  4. Shape the dough into balls slightly smaller than golf balls. Place them on the prepared baking sheets, spacing them about 3 inches apart.

  5. Bake for 7 to 9 minutes until the cookies are set but still soft. Remove from the oven and allow them to cool completely on the baking sheets.

  6. While the cookies cool, prepare the filling. Beat the softened butter and cream cheese together in a separate bowl until the mixture is smooth and creamy.

  7. Add the dry yellow cake mix, vanilla extract, and milk to the butter and cream cheese mixture. Beat until well combined.

  8. Gradually add the powdered sugar to the filling while beating, adding a little at a time until you reach your desired consistency. Add more powdered sugar if needed for a thicker filling.

  9. If desired, stir in a few drops of yellow food coloring to give the filling a pale yellow hue.

  10. Frost the bottom surface of half of the cooled cookies with the filling, then press an unfrosted cookie on top of each frosted one, bottom-side down, to create a sandwich.

  11. Pour colorful sprinkles into a shallow bowl. Roll the exposed edges of each sandwich cookie in the sprinkles to decorate.
