Ingredients

1/4 cup red or white miso

1/3 cup sake

1 tablespoon soy sauce

2 tablespoons vegetable oil

1/4 cup sugar

4 skinless salmon filets, at least 1 inch thick, 5 to 6 ounces each

Directions

  1. Preheat your toaster oven to 450°F (232°C).

  2. In a small bowl, whisk together the miso, sake, soy sauce, and sugar until smooth and fully combined. Set the glaze aside.

  3. Line a toaster oven tray with foil and brush with the vegetable oil to prevent sticking. Arrange the salmon filets skin-side down on the prepared tray.

  4. Brush the miso glaze generously over the top of each salmon filet, reserving a small amount for finishing if desired.

  5. Place the tray in the preheated toaster oven and roast for 5 minutes, until the salmon reaches an internal temperature of 145°F (63°C) and the flesh is opaque and flakes easily when tested with a fork.

  6. Remove from the oven and serve immediately while hot. Drizzle with any remaining glaze if desired.
