Spearmint leaves are brewed with honey and maple syrup, then chilled and brightened with fresh lemon and lime juice. This naturally sweet beverage is perfect for warm afternoons and serves four.

Ingredients

1 large bunch fresh spearmint

4 cups water

1/3 cup mild honey

1/3 cup maple syrup

1 large lemon, freshly squeezed

1 large lime, freshly squeezed

Ice cubes for serving

Directions

  1. Bring 4 cups of water to a boil in a medium saucepan. Once boiling, remove from heat and add the large bunch of fresh spearmint leaves, pressing them gently into the water to submerge.

  2. Let the mint steep for 8-10 minutes until the water becomes fragrant and takes on a pale green color. Do not over-steep, as this can make the tea bitter.

  3. Strain the mint leaves from the tea, discarding the solids. Pour the mint-infused water into a pitcher.

  4. While the tea is still warm, stir in the 1/3 cup of mild honey and 1/3 cup of maple syrup until fully dissolved and combined.

  5. Squeeze the juice from the large lemon and large lime directly into the pitcher, stirring well to incorporate. Taste and add additional honey or maple syrup if desired.

  6. Refrigerate the tea for at least 1 hour until completely chilled, or place in the freezer for 20-30 minutes for faster cooling.

  7. Pour the chilled tea into glasses filled with ice cubes and serve immediately. Garnish with fresh mint sprigs if desired.
