Ingredients
4 flour tortillas, 8 inch
2 medium peaches, pears, or apples, peeled and chopped
2 tablespoons packed brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons fat-free milk
Sugar for topping, optional
Directions
Wash your hands thoroughly with soap and water before beginning.
Preheat the oven to 350°F. Lightly grease a baking sheet with cooking spray or butter.
Warm the flour tortillas in the microwave for 20-30 seconds or in a warm oven for a few minutes to make them pliable and easier to work with.
Peel and finely chop your chosen fruit (peaches, pears, or apples) into small, bite-sized pieces.
In a small bowl, combine the brown sugar, ground cinnamon, and ground nutmeg. Mix well to combine the spices evenly.
Lay each warm tortilla flat. Divide the chopped fruit into 4 equal portions and place about 1/4 of the fruit on one half of each tortilla.
Sprinkle the cinnamon-sugar mixture evenly over the fruit on each tortilla.
Fold and roll each tortilla starting from the side with the fruit, creating a pocket or burrito shape. Place seam-side down on the prepared baking sheet.
Using a sharp knife, make 2-3 small slits on the top of each pocket to allow steam to escape during baking.
Lightly brush the top and sides of each pocket with the milk. If desired, sprinkle a small amount of sugar over the top of each pocket.
Bake in the preheated 350°F oven for 8 to 12 minutes, or until the tortillas are light golden brown.
Remove from the oven and allow to cool for 2-3 minutes before serving. Serve warm or at room temperature.
