3/4 cup sliced mushrooms

1/2 cup kumquats, thinly sliced, seeds removed

1/4 cup chopped walnuts

1 1/2 teaspoons Dijon mustard

1 clove garlic, minced

1 tablespoon honey

1/2 orange, juiced

Pinch of sea salt

Directions

  1. In a jar with a tight-fitting lid, combine the champagne vinegar, Dijon mustard, minced garlic, honey, and fresh orange juice. Seal the lid and shake vigorously for 30 seconds until all ingredients are fully incorporated and emulsified. Drizzle in the olive oil while shaking, then shake again until the dressing is well combined. Season with a pinch of sea salt and freshly ground black pepper to taste.

  2. Place the chopped kale into a large serving bowl. Sprinkle generously with sea salt and massage the kale leaves by hand for 1-2 minutes, using a firm rubbing motion to soften the leaves and break down their fiber. This helps to tenderize the kale and makes it more palatable.

  3. Add the arugula, sliced mushrooms, sliced kumquats, and chopped walnuts to the massaged kale.
