Quinoa Avocado Salad with Fresh Tomatoes and Sweet Corn

Ingredients
1 cup quinoa
2 cups water
Salt to taste
2 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
2 teaspoons Dijon mustard
2 teaspoons honey
1/2 teaspoon garlic powder
Black pepper to taste
1/2 avocado, pitted, peeled, and diced
5 ounces cherry tomatoes, sliced
1/3 cup thawed frozen sweet corn
3 tablespoons fresh chives, chopped
Directions
Bring 2 cups of water to a boil in a saucepan over medium-high heat. Add a pinch of salt to the water.
Add the quinoa to the boiling water, then reduce heat to low. Cover the saucepan and simmer until all water is absorbed, approximately 10-12 minutes. The quinoa is done when you can see the thin white spiral germ separating from the grain. Remove from heat and set aside to cool slightly.
While the quinoa cooks, prepare the vinaigrette. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, honey, and garlic powder until well combined. Season with salt and black pepper to taste, then whisk again until smooth.
In a large mixing bowl, combine the cooked quinoa, diced avocado, thawed sweet corn, and chopped chives. Pour the vinaigrette over the mixture and stir gently until all ingredients are evenly coated.
Carefully fold in the sliced cherry tomatoes, being gentle to avoid breaking them apart. Taste and adjust seasoning with additional salt and pepper as needed.
For best flavor, refrigerate the salad for at least 30 minutes before serving. This salad can be stored in an airtight container in the refrigerator for up to 2 days.
