Ingredients
1 package Ghirardelli Double Chocolate brownie mix with chocolate chips
1 large egg
¼ cup vegetable oil
¼ cup water
10-14 Oreo cookies
Directions
Preheat your oven to 325°F (160°C). Grease an 8x8-inch square baking pan with non-stick spray or butter and set aside.
In a large mixing bowl, combine the brownie mix, egg, vegetable oil, and water. Stir until all ingredients are fully incorporated and the batter is thick and smooth.
While the batter rests, place the Oreo cookies in a large sturdy bag. Using your hands or a rolling pin, coarsely crush the cookies, leaving some pieces fairly large for texture. You want a mix of different-sized pieces.
Fold the crushed Oreo cookies into the brownie batter, mixing well to distribute them evenly throughout. The batter will remain thick.
Pour the batter into your prepared baking pan and spread evenly. Bake for 30-40 minutes, checking doneness by inserting a toothpick or knife into the center. The toothpick should come out mostly clean with just a few moist crumbs—slightly underbaked is ideal for fudgy brownies.
Remove from the oven and allow the brownies to cool completely in the pan before cutting into 12 squares.
Comments
This is a budget-friendly weeknight dessert that checks every box for a Charlotte kitchen: brownie mix, eggs, oil, and water are staples at every chain, and Oreos turn up everywhere from Walmart to ALDI. The stated 45 minutes is honest (mix, bake, cool), and at roughly $0.75 per serving it undercuts any bakery brownie. The real draw is speed and reliability—no special ingredients, no technique risk, and leftovers keep for days at room temperature. The only caveat is that Oreo brownies are fussy-adjacent: you need to fold in the cookies carefully to avoid over-mixing the batter, and the cookies soften slightly in storage, so they're best eaten within two days.
