Ingredients

1 2/3 cups all-purpose flour

1 tsp baking powder

1/4 tsp baking soda

3/4 cup brown sugar

1/4 cup sugar

1/2 cup butter

1/2 cup peanut butter

3 egg whites

1/2 cup milk

1/2 cup sour cream

1 1/2 tsp vanilla extract

1/2 cup peanut butter chips

1/2 cup mini Reese's pieces

3/4 cup salted butter, room temperature

1/2 cup shortening

4 cups powdered sugar

3/4 cup peanut butter

2-3 tbsp water or milk for frosting consistency

Directions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with 14 cupcake liners.

  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, brown sugar, and granulated sugar until well combined.

  3. Add the 1/2 cup butter, 1/2 cup peanut butter, egg whites, vanilla extract, sour cream, and milk to the dry ingredients.

  4. Mix on medium speed with an electric mixer until the batter is smooth and well blended, about 1-2 minutes.

  5. Gently fold in the peanut butter chips and mini Reese's pieces using a rubber spatula until evenly distributed throughout the batter.

  6. Divide the batter among the cupcake liners, filling each about two-thirds full.

  7. Bake for 18-20 minutes, until a toothpick inserted into the center of a cupcake comes out clean or with just a few moist crumbs.

  8. Remove the cupcakes from the oven and let them cool in the pan for 1-2 minutes before turning them out onto a wire rack to cool completely.

  9. While the cupcakes cool, prepare the frosting. In a medium mixing bowl, beat together the 3/4 cup room-temperature salted butter and shortening until light and smooth.

  10. Add 2 cups of the powdered sugar and mix on medium speed until smooth and creamy.

  11. Add the 3/4 cup peanut butter and 1 tbsp of water or milk, mixing until well incorporated.

  12. Gradually add the remaining 2 cups of powdered sugar and mix until smooth.

  13. Add additional water or milk 1 tablespoon at a time until the frosting reaches your desired spreading consistency.

  14. Once the cupcakes are completely cooled, pipe or spread the peanut butter frosting generously onto each cupcake. Serve and enjoy!
