2 wild-caught swordfish steaks (about 6 oz each)

2 tablespoons olive oil

Celtic sea salt to taste

Cracked black pepper to taste

2 ounces pastured butter, softened

1 tablespoon Herbes de Provence

Directions

  1. Preheat your oven to 400°F. Pat the swordfish steaks dry with paper towels, then coat both sides evenly with olive oil. Season generously with Celtic sea salt and cracked black pepper.

  2. In a small mixing bowl, combine the softened butter with the Herbes de Provence, mixing well with a fork until fully blended. Set the herb butter aside.

  3. Heat an oven-safe skillet over medium-high heat. Once hot, carefully place the seasoned swordfish steaks in the pan and sear for 2 to 3 minutes on each side until golden brown.

  4. Transfer the skillet to the preheated 400°F oven and roast the swordfish for 10 minutes, until the fish is opaque and flakes easily when tested with a fork (internal temperature should reach 145°F for food safety).
