1½ pounds medium-thick asparagus

8 cups water

2 tablespoons coarse salt

Directions

  1. Rinse the asparagus under cold running water. Trim about 1–2 inches from the woody bottom end of each spear by snapping or cutting off the tough portion where the stalk becomes tender.

  2. Bring the water to a rolling boil in a large pot. Add the coarse salt and stir until dissolved.

  3. Carefully add the asparagus spears to the boiling salted water, standing them upright if possible to cook evenly, or laying them flat. Return the water to a boil.

  4. Cook for 4–5 minutes, or until the asparagus is tender-crisp when pierced with a fork but still maintains a bright green color and slight firmness.

  5. Using a slotted spoon, carefully remove the asparagus from the water and transfer to a serving plate. Serve warm as a simple vegetable side dish.
