Ingredients

4 slices thick oat bread

2 teaspoons garlic spread

4 slices smoked Gouda cheese

6 slices deli roast beef

1/4 cup roasted bell pepper strips and caramelized onions

Directions

  1. Lightly spread the garlic spread on one side of each bread slice, using about 1/2 teaspoon per slice.

  2. Lay one slice of bread with the garlic spread facing down on a work surface. Layer 3 slices of roast beef on top, followed by 2 slices of smoked Gouda cheese, and half of the roasted bell pepper and caramelized onion mixture.

  3. Place a second slice of bread on top with the garlic spread facing upward. Repeat these layers with the remaining bread, roast beef, cheese, and pepper-onion mixture to create the second sandwich.

  4. Preheat a panini press or griddle to medium-high heat.

  5. Place both sandwiches on the hot panini press or griddle. Press down gently if using a panini press, and cook for 3-4 minutes until the bread turns golden brown and the cheese melts completely.

  6. Remove the sandwiches from the heat and cut each one in half or into quarters. Serve warm.

All ingredients are standard stock at Harris Teeter, Food Lion, or Walmart—no special stops needed. The roasted bell peppers and caramelized onions are the cost drivers at roughly $3–4 combined, pushing the total to about $8–10 for two servings or $4–5 per serving, which is fair for smoked gouda and quality roast beef. The stated 10 minutes ignores assembly time for a proper panini press sear; budget 15–18 minutes total. This is a quick, attention-light lunch for two that holds well as a same-day leftover but does not reheat gracefully without losing the bread texture.
