Ingredients
1 cup whole wheat couscous
1 cup water
¼ tsp salt
2 tsp extra-virgin olive oil
1 nectarine, chopped
1 green onion, thinly sliced
½ Juice of ½ lemon
¼ cup slivered almonds, toasted
Directions
Pour the water into a small saucepan and bring to a boil over medium-high heat.
Stir in the couscous and salt, then immediately remove from heat and cover with a lid.
Let the couscous stand undisturbed for 5 minutes to absorb the liquid.
Remove the lid and fluff the couscous gently with a fork to separate the grains.
Drizzle the olive oil over the couscous and stir to distribute evenly.
Fold in the chopped nectarine, sliced green onion, and lemon juice until well combined.
Transfer to a serving dish and top with the toasted slivered almonds just before serving.
