Ingredients
1 cup Feta cheese, crumbled or finely diced
½ cup Tomatoes, diced
1 teaspoon Dried mint leaves, crushed
¼ cup Extra virgin olive oil
Directions
Place the crumbled feta cheese into a serving bowl.
Add the diced tomatoes to the bowl with the feta cheese.
Sprinkle the crushed dried mint leaves over the tomatoes and feta.
Pour the extra virgin olive oil over the ingredients.
Gently toss all ingredients together until well combined, being careful not to break up the feta too much. Serve immediately.
Comments
Every ingredient is available at any Charlotte grocery chain, and at solid prices—feta runs $4–6 per block, tomatoes are cheap year-round, dried mint is a staple, and olive oil is a pantry standard. The stated ten minutes is honest and actually realistic; this requires only chopping and tossing. It's a straightforward side that holds up in the fridge for a day but is best eaten fresh the same evening, and it scales easily for any crowd size. The main limitation is that fresh tomato quality varies sharply with season, so summer renditions vastly outshine winter versions made with pale, mealy supermarket fruit.
