Ingredients

1 small pineapple, peeled and cut into 1-inch chunks

1/4 cup sugar

2 cups water

1/8 cup fresh mint leaves, tightly packed

1 juice of 1 lime

Directions

  1. In a blender, combine the pineapple chunks, sugar, and water. Blend until smooth.

  2. Pour the pineapple mixture through a fine-mesh strainer into a large pitcher, pressing gently on the solids to extract as much liquid as possible. Discard the pulp.

  3. Add the fresh mint leaves to the strained liquid and stir gently to infuse.

  4. Squeeze the lime juice into the pitcher and stir to combine.

  5. Cover and refrigerate for at least 45 minutes until well chilled.

  6. Stir well before serving. Pour into glasses filled with ice and enjoy.

Grocery List Plus Editorial Staff4.5

This is a straightforward agua fresca that checks every box for a Charlotte weeknight: pineapple, sugar, water, mint, and lime are all available at any major chain, and the cost per serving runs under 75 cents with fresh pineapple at Harris Teeter or Food Lion. The real time is closer to 25–30 minutes (blend, strain, chill in a fast freezer), not 70, which suggests the recipe pads for passive chilling—a minor flaw in honesty. It's a refreshing, no-fuss drink that reheats exactly zero times, which is fine for a summer cooler, and the fresh mint and lime are easy local finds; the only reason this doesn't hit 5.0 is the misleading total time and the fact that it's a drink rather than a meal component.
