Ingredients

4 boneless, skinless chicken-breast halves (about 6 ounces each), pounded ½ inch thick

1 pound baby bok choy, trimmed and leaves separated

12 ounces cherry tomatoes, halved

1 small shallot, thinly sliced

1 bunch fresh thyme

2 tablespoons extra-virgin olive oil

¼ cup dry white wine, such as Sauvignon Blanc

Coarse salt and freshly ground black pepper to taste

Directions

  1. Preheat your oven to 400°F. Cut four 16-inch squares of parchment paper and set them on a work surface.

  2. Divide the bok choy leaves evenly among the four parchment squares, arranging them in the center of each.

  3. Place one pounded chicken breast on top of the bok choy on each piece of parchment paper.

  4. Distribute the halved cherry tomatoes and sliced shallot evenly over and around the chicken on each packet.

  5. Divide the fresh thyme among the four packets, scattering sprigs over the contents.

  6. Drizzle ½ tablespoon of olive oil over each packet, then pour 1 tablespoon of white wine into each one. Season each packet generously with coarse salt and freshly ground pepper.

  7. Fold each parchment paper in half to create a sealed packet, then crimp and fold the edges tightly to seal. Arrange the packets on a baking sheet.

  8. Place the baking sheet in the preheated oven and bake for 25 to 30 minutes. The packets should puff up with steam. To test for doneness, carefully open one corner to check that the chicken has reached an internal temperature of 165°F.

  9. Remove from the oven and place each packet on a plate. Carefully open the parchment at the table to release the aromatic steam, then serve immediately.
