Ingredients
2 packages (1.4 ounces each) instant low-calorie chocolate pudding mix
3 1/2 cups skim milk
1/4 cup peanut butter
15 graham cracker rectangles
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Pour the chocolate pudding mix into a large mixing bowl. Add the skim milk and whisk vigorously for about 2 minutes until the pudding is smooth and begins to thicken.
Add the peanut butter to the pudding and beat well with a mixer or whisk until fully combined and creamy.
Line the bottom of a 9x13 inch baking pan with 7 or 8 graham cracker rectangles, breaking pieces to fit as needed.
Pour the chocolate-peanut butter mixture evenly over the graham crackers and smooth the surface with a spatula.
Arrange the remaining 7 or 8 graham cracker rectangles on top of the pudding layer, breaking pieces to fit as needed.
Cover the pan with plastic wrap and freeze for at least 4 hours, or until solid.
Remove from the freezer and cut into 15 equal squares using a sharp knife. Use a thin spatula to lift each bar from the pan.
Store the bars in a freezer-safe plastic bag or airtight container in the freezer for up to 2 weeks.
